The Roast Master

The Roastmaster, the one who oversees the roasting process, is required to know how time, temperature, humidity and the history of the green beans will affect the final outcome. It takes a long time to perfect this art of being able to discard the elements which are unwanted and to maximize the desirable parts.

At each step in the roasting process, the Roastmaster must decide how to develop and protect the special characteristics and properties of the coffee beans, whether they are a specific type or a blend. At Joffrey's, we are keenly aware that our skill in selecting, handling and processing our coffee is what sets us apart from the rest. Therefore, we take our work very seriously. We are also aware that no amount of effort on the front end can make up for careless storing and preparation at the point of service. In other words, the quality of Joffrey's is absolutely a Team effort.
